I already have all this equipment, I am just wondering if it mackintosh compatible. Many Thanks

CPU - Intel i5 7600k
Mobo - MSI M5 Z270
RAM - 16GB Corsair Dominator DDR4
GPU - GTX 1080 FD (guessing this is where the problems start)
 
Could run web drivers with High Sierra, anything newer would require AMD card.

I think, there for I am.

You can run either Mojave or Catalina with the 1080 removed and use the Intel HD630 graphics on the CPU. Put the 1080 back in when you want to game in Windows. Yes, I know that's a hassle to do that but it works. You can install High Sierra and then use the Web drivers if you are OK with being a few macOS versions behind. The 1080 won't work as smoothly in macOS as AMD cards with native support or supported Intel graphics will.
