The Clover log doesn't help resolving why the bios flash screen hangs for a minute or so, since the log only starts once Clover loads. As much as I will regret suggesting this, but can you try booting from a different drive and remove the M2 drive?

I will remove M2 and boot from a SATA drive now
 
Okay let's attempt some additional measures. But let's be more methodic in our approach. You have reported 2 problems that may or may not be related. Let's restate them and provide some hints for each one separately.

Problem 1: Time to Reach Clover Boot Screen
From a fresh boot, you experience a delay of about 1 minute before the Clover Boot Menu appears.
  • Removing all disks but the Mojave M.2 did not solve this.
  • Removing even the M.2 disk and booting from a SATA disk did not solve this.
Additional Suggestions:
  • Because you have both M.2 drive(s) and SATA drive(s) installed, are you aware of the SATA port restrictions that take effect when one or more M.2 drives are installed? Your motherboard owner's manual will provide these restrictions. On most motherboards, one or more SATA ports become unusable when one or more M.2 drives are installed.
  • Power down the system and unplug the power cable for 10 seconds to reset CMOS. Power system up again. Do you still experience this delay?
  • If so, check your BIOS settings carefully. Redo them anyway. Start with "Load Optimized Defaults" and follow the BIOS guidelines in the tonymac guide. Do you still experience the delay?
  • If so, boot from the USB install disk that you created with UniBeast. Press F12 at BIOS screen and choose the USB disk. How long does it take for Clover Boot Screen to appear?
  • If still long delay, install latest version of Clover on the USB install disk -- but it's better to create a new USB install disk then upgrade Clover on that disk. Boot from the new USB disk. Still long delay before Clover Boot Menu appears?
  • If so, download latest BIOS for your motherboard and flash it. Then you must set all BIOS parameters again. Make sure to double-check the settings. In BIOS, disable all Serial, Parallel, and SuperIO ports if there are any. Ensure "XHC Handoff" is enabled.
Problem 2: Time to Reach Mojave Login Screen
It takes about 1 minute 30 seconds to reach the login screen.
  • Add the boot argument "-disablegfxfirmware" to your config.plist using Clover Configurator. Does it reduce the 1 min 30 sec delay?
 
aware of the SATA limit, not using 4 and 5 as per manual , will shut down and implement your suggestions, thank you for the time!

did everything you suggested, last was adding boot argument now time is from gigabyte splash screen to clover menu is 16 seconds form clover to Mojave is 38 seconds even with the delay when process bar gets to 3/4 of the way screen goes black and process bar finishes the last 1/4 so this is much better, I want to thank you very much, I do appreciate everyones time and effort! What a pleasure to have the help!!!!!

Good job -- glad to hear it! That little screen flutter at 3/4 of the way is normal. It happens when macOS initializes the graphics drivers for all connected monitors.
