What do you run that you are using up 128GB? Are you sure one of your apps don't have a memory leak? If you need 128GB, you can do a build with X299.
i9-9900K is running solid for me. Every bit as solid as my i7-8700K did. I think I recored over 40 days of uptime in macOS.
I have a very diverse job in that I oversee many projects that are extremely variable. Unfortunately I have over 30-50 apps open at any given time and push the limits (ranging from Photoshop and other design apps to multiple browsers to development IDEs and Terminal/shell apps). I had a fight with an Apple engineer about 11 years ago about how hard I push macOS and their expectation of me to limit my work diversity... I'm just too busy to deal with people telling me I push computers too hard!
I will give Apple props in that Mojave is doing better than any OS release has done for several years, but they're still disgusting regarding their focus on iOS and neglect of macOS largely.
