Current spec i7 Customac mini with older Osx 10.7 or 10.8 ?

What would be the best way to put a slightly older osx like 10.7 or 10.8 on the current hardware as in the CustoMac mini deluxe with i7 4.2 Ghz?

I made a successful build of this running Sierra, but not sure how to go about putting 10.7 on it as the installers, multibeast etc. seems to be aimed to Sierra?

Lion (10.7) and Mountain Lion (10.8) have no support for current hardware. Mountain Lion (10.8.5) only supports hardware as far as the Intel 8 series chipset (Haswell, not sure about the 9 series). Lion (10.7.5) only supports hardware as far as the Intel 7 series chipset (Ivy Bridge). You cannot install Lion or Mountain Lion on current hardware.

The i7 7700K and related hardware are only supported in MacOS Sierra 10.12.6 and later. If you want to run Mountain Lion, you need hardware like, for example, those in my older build. I still run Mountain Lion on my older build.

Thanks that's really useful to understand. I've checked and I can actually do up to 10.11 (El Capitan) - do you know what the fastest chipset / processor is for 10.11?

Skylake (Intel 100 series chipset) is the latest hardware supported by El Capitan. The fastest Skylake processor should be the Core i7 6700K. Pair it with a Z170 motherboard and you should be able to install El Capitan.

Can I use the current version installation tools (MultiBeast, Clover etc) or does this require older / different versions or installation method?

If you want to install El Capitan you should use an older version of MultiBeast and Unibeast.
