• Only one of the Ethernet ports work. I'm not sure how to get the second one working. It's maybe not a big deal.
• Bluetooth is working without any configuration. Wifi isn't. I've ordered the Broadcom board, it'll arrive in a few weeks.
• Added a Geforce GTX 1060. Installed the nVidia drivers and followed this guide, no problems: https://www.tonymacx86.com/threads/new-method-for-enabling-nvidia-web-drivers-in-clover.202341/
• Managed to dual-boot Mac/Windows on my m.2 SSD.

It took me several attempts but I got it working on my GA-Z270N-Wifi / I5 7600K. Annoyingly, Clover configurator didn't always auto-save my changes... Pressing Cmd-S after each change solved this.

How did you solve this issue?
