Idling for 10 minutes causes Sierra to lag/freeze for a couple of minutes

You will do. You're using the wrong SMBIOS should be using iMac 13,2 not iMac 14,2. Since when does a iMac 14,2 have a i7 3770?

Okay, I'll fix that when I'm back home. Is it possible the system definition (and that alone) is the cause of my freezing?

Possibly. iMac 14,2 uses X86PlatformPlugin not AppleIntelPowermanagement so doesn't help things.

Interesting. I had been on Mac 13,2 (and things were stable) until September 2016 and then read something that led me to switch to iMac 14,2. See attached Clover config file for what I had before. I think i should revert.

Config isn't correct. SMBIOS Trust/False should be Trust/True. Not quite sure on why you have AsusAICPUPM, KernelPm not needed. Recommend disabling onboard iGPU and inject intel should be False.

You shouldn't have any problems like us with a series 7 motherboard. If you have then it is most likely that our issue is the Nvidia drivers as the only thing we have in common is the GPU using non native drivers.

VioletDragon will sort it out for you. He sorted all the things not needed I was using

Only because my system was 100% stable with no freezing upon idle wakeup while I was using iMac 13,2 (and @VioletDragon said iMac definitions have big implications on power management behavior), I'm going to first use the correct system definition for my CPU (i7-3770) then go deeper if needed.
 
*FIXED* Good news! After making @VioletDragon's config changes, I am no longer getting any IOGraphicsAccelerator2 faults. I think the trick was disabling iGPU/Intel GPU injection. I couldn't be happier! Thanks for everyone's support.

Yes it is! Intel GPU injection is the reason this was all happening. I disabled it a few days ago and I haven't had a freeze since then.
