Faster in special programs, i think something like watching 8K60 Youtube movies, M1 have modern codecs for decode it and so it will be time faster, than older CPU based algoritm.
This transition will be longer, as much more (lots !) of Macs on hands worldwide. But I remember they through Rozetta very fast in later MacOS, I remember, when I can't start Warcraft III on new (maybe 10.7 or 10.8, don't remember exactly) MacOS.

The only question if Intel Tiger Lake built-in graphics and AMD Radeon 6800-6900 (RDNA2) graphics cards will be supported in Big Sur, or even them willn't be ever, as seems no more new Macs on new Intel x86 CPUs will be released. Maybe Radeon Pro on RDNA2...
How you see, that performance is lower? Did you test in Unigene Heaven, it has strong graphics and so very reliable results, you can see how many performance was dropped.
Impressive, everything works on my GTX 1070, Palit branded. I can play World of Warcraft in 2560*1440 with medium-high graphics and SSAA 4x anti aliasing with a high framerate.
However performance of same game in Windows is much better under DirectX11, where I can set maximum level of shadows...
About a year without macOS! Wow, preparing for installation, never used Sierra with acceleration...)) Just need a new SSD for Mac, my old ones are full)
Bad, it's a higher chance, that new MacPro will be with AMD as last one(
However.... Nvidia has great GTX1060 GPU, this one can fit small MacPro case, performance is almost the same with Radeon 480, but much lower TDP.
Our only hope is a Mac Pro 2010, it's supported in Sierra, it has PCI-E slots and so users can buy latest PC Pascal Quadro, install it and use CUDA for computing.
