I don't know about Mojave because it's old at this point.
Although it is recommended to use the MultiBeast Mojave version or the Clover Boot loader.
Now I am using only Opencore-based EFI. Verified ONLY by Catalina and Big Sir.

You are right. I couldn't find the install update partition by inserting an "install" keyword to hide the install icon used by USB installtion in config.plist,

Removing the extra boot entries from Clover Bootloader.
To remove boot entries
edit config.plist with clover configurator.
add the keyword of entries to Hide Volume
(* do not insert "install" keyword" to delete install...
I also do not know why the installation partiton is created in high sierra v10.13.1, not yet tried to v10.13.2.
