Yeah. There is no option for hardware raid. Only software raid0. You need to create the array from an existing osx partition and then make it bootable. It takes some time but it worth it!

The Bluetooth is powered by the USB lines provided on the mini pci-e port. If you want to permanently disable it you should better tape the USB pins than taking the chip off.
