Solved!
This was caused by this kext: ThunderboltReset.kext
Once disabled boot time is back to normal.
I saw another thread where people reported slow boot time caused by AirportBrcmFixup but it's working ok for me.

I just updated from Catalina to Big Sur 11.1
Everything went well, but booting time went from a few seconds in Catalina to a few minutes in Big Sur.
I have the latest OC 0.6.4 and latest kexts.
Boot is spending a lot of time with the progress bar under the Apple logo stuck in the middle...
The last few posts talk about OC, but earlier in the thread another guy complained about the same issue.
I had Clover at the time. I think it has to do with the SSD, as we both have Samsung 970 Evo.
Someone posted some Power Gadgets screenshots, that may be one way to measure if it's working...
Hi. No I wasn't able to. However I am using NVMEFix 1.0.4 with latest LILU and OpenCore and battery life has improved so it must be working somehow.
I think the debugging problem is common as per thread on InsanelyMac

Hi. I am moving from Clover to OC. The laptop boots successfully but the WiFi card is not working.
I added this to my config.plist

I did try installing the Debug Enhancer, and re-installing the debug version of NVMEFix but no luck...No NVMePMProxy

I read a little about it when you told me in the initial post, however I have SIP disabled anyway so I'll keep in /L/E for now. Excluding this booting issue my system is super stable.
I remember Rehabman saying that having kexts in Clover is like flying blind, also don't they get loaded in user...

I installed NVMEFix in /L/E but I don't get the NVMePMProxy in IOReg. The kext seems to load ok though and apst is set to true.
I tried to install the debug version of NVMEFix and added -nvmefdbg to Clover's boot args but the only messages I got are:

The only other change excluding the resolution (which I've done) was to inject kexts rather than using /L/E...that's easy to switch using Clover booting options. I'll give it a try next time I reboot. I could boot OK the last couple of times with standard setup so this is still baffling me...
