To summarize,
1. I changed the SMBIOS back to Mac mini 8,1 and cloned my Mojave drive. B/C a new serial number was generated, my iCloud wasn't working, and I left it like that b/c I was going to change the SMBIOS again.
2. Followed your guide and updated to Catalina without any...
-no_compat_check worked!!!! I'm back on my Hackintosh now :) I'll change the SMBios back and clone and then update to Catalina then change the SMBios again.

I’ll give that a go when I get back home from work today! I did see a way to manually edit the SMBIOS from clover, but it wouldn’t auto populate every field based on the Mac device I choose. I wasn’t sure if it’d boot or potentially mess things up even more when I just try to boot after editing...
I plan to upgrade to Catalina, but I’m unsure how to get back into Mac OS X from this error. Is there a way I can edit the config file from clover? I can’t get back into OS X, so I’m very lost...

I haven't been following the thread for a little bit, so I'm not sure if it's buried somewhere, but do you have a guide for updating to Catalina on this thread? I just ordered a portable SSD to back up my entire system, so I'm almost ready to go!

I ignored the update for 10.14.4 because I was afraid it might cause some hiccups, and I read somewhere that something wasn't working properly with 10.14.4 yet. Did you update too 10.14.4? Did you have to adjust anything afterwards?

I followed your instructions, and confirmed the that the BIOS is F5. Please see screenshots attached. The main options available from Clover for me were
-Boot FireVault Prebooter from Preboot
-Boot macOS Install Prebooter from Preboot
-Boot macOS Install from Mojave (Default choice...
I went through the guide again, but in the guide the boot install is suppose to disappear.... idk why mine is still there.... lol. Should I try a reinstall? Or is there a way to manually remove it?

I just noticed something weird when I was booting my computer up. After clover boots up there are several disk choices, and the default is the install Mojave one... Is there a way to change the default boot disk? I thought it was only doing that bc my hard drives are plugged in, but...
