Another update. I have moved on to Opencore and Big Sur. I installed the 5700XT and it's still crashing.. However, it does recover. Here are the logs:

Another update.
Problem solved. I didn't have my BIOS settings set correctly. I assumed that if it worked on Clover, it would be fine under Opencore..
Thanks again for all the help everyone.. I even managed to get Big Sur up and running.
Quick update..
I tried the two EFI's that @tedyun mentioned and neither booted in Catalina.. I made sure to update all fields for SMBIOS as well.
I also made sure the issue wasn't the firmware on my Samsung EVO 970+.. The firmware installer indicated that I had the current firmware.

Just did.. Thanks.. I have both but switched back to RX 580 because the 5700XT on Catalina was causing lots of desktops freezes.. which apparently might be fixed in Big Sur.. Thus the reason for me starting to look into open core. ;-)

I corrected the errors.. Same problem though..
I made sure to clear the nvram before booting.

The issue was BIOS. I did not have all the correct settings. Just because your BIOS settings work in Clover does not mean they will work in Opencore.
