Same issue for my 2690V2 X79 ... i got it working sometimes with 4 cores .. but not stable. Lets hope for a fix.
If tried a fork of CpuTscSync.kext here: https://github.com/wy414012/CpuTscSync - but it wont work for my CPU. Maybe someone else will have luck.
Yes x79 and Big Sur work very well ... but it is a nightmare until first stable boot. Probably its because Big Sur is my first contact with OpenCore.
See my current work in progress attached. It is not finished completly as onboard audio and some usb3 ports wont work but in general it works good...
It works smooth on my rig with E5-2690V2 and 5700XT.
I used Clover 5107 and updated Lilu and WhatEverGreen before starting the update.
Nothing else to do ... great!
My Sapphire Pulse 5700 XT is running smooth without any problems under 10.15.1 and two monitors (DP, HDMI).
Using Powerplay table to reduce power and noise. 1900MHz at 960mV. ;)
Update of my 10 Core MacPro 6.1 Hack went smooth - except a stuck at "kextd stall[1], (240s) - AppleACPICPU" while booting into the installer. Solution: be patient - after 15min the installer continues.
->Before starting the mojave installer i changed to the most recent Clover Version 4674...
