I had a very similar issue with multiple drives. It appears I was getting to the windows install efi via a clover boot usb. I needed to remove that just before installing onto the hard drive. The hard drive you want to install windows 10 on has to be the only Drive available.

Spoke to soon. Now I cant get the LAN to be recognized in any OS. It just disappears bios can't even smart detect a cable. Shutting down completely seems to solve it but I need to reinstall drivers in hackintosh.
Lnx2mac didn't work for me. 8111e was never recognized in system profiler. I had to use the realtek mac drivers on their website. Went like a dream after that...
