I've since switched my build over to OpenCore and it's now running stable. I think there still might need to be some optimizing I need to do, but I'm getting closer.
Were you using Octane with your 5700XT or Radeon VII?
Just following up again – I just did an overnight render with the GPU load at or near 100% for ~6 hours and this morning the render was complete and computer was still running. So I'm gonna say this issue is solved!

After years of promises and missed deadlines, on July 20th, 2020 a beta MacOS version of the GPU render Octane was finally released.
Here's a list of the current supported GPUs and their Octane Benchmark scores:
Radeon Pro Vega II Duo - 412 OB*
Radeon Pro Vega II - 206 OB
Radeon VII - 200 OB...
I've updated to 19G2021, native MacOS update process went smooth.
Sadly crashes are still taking place. Here's the screenshoot of the system.log from when the most recent crash took place. (highlighted the DumpGPURestart that corresponded with the system time when my computer locked up.)...

Thanks for the tip, I just switched my SMBIOS to iMacPro1,1 tested with the same rendering scenes that had given me trouble in the past and the "(com.apple.DumpGPURestart)" still take place.
Are there any Navi cards that are more stable at this point? Or are they all kind of iffy until Big Sur...
@slim.jim Thank you for the reply! I wasn't aware that was a known issue. Would you say any further time troubleshooting would be wasted? Sounds like the only solution would be to wait for an update from Apple.
Could you explain exactly how to add an "explicit declaration saying injectATI is false". I have the Inject ATI unchecked, but sounds like there's a bootflag or something I need to add in order to set it as false? Thanks
Still working on this issue. After learning that OSX has a Console the errors associated with the freezes/crashes are:
