Software update goes through the motions of updating, but on reboot update installer is not available in OC Boot Menu. Booting into Big Sur Disk still shows 11.3.1. I tried downloading the full installer and the same result. It just goes through the motions, and OC doesn't see the update...

Actually, most of these are wrong... You should be putting your kexts in efi/clover/kexts/10.x. You should only put fakesmc in efi/clover/kexts/other which is only for updating, installing and recovery. All of the other kexts should go to efi/clover/kexts/10.x and anything hardware related...
