I was able to continue with the OC, I had to do a lot of reading and prepared installer in Windows and finally I booted from the usb and continued with the install OS X option and completed from where I got stuck. Once I booted in the BigSur I copied the OC EFI Folder to EFI Partition...
It was good enough and working correctly. How can I make changes in windows and what changes I need to make for it to work. Correct config file is in the EFI folder I posted. I m posting it here I think I posted the old one in the post #4.
I was using the latest clover r5142. I don’t see any entry in the clover menu to boot into. Here is EFI folder fully working without any issues and I always updated without any issues but this time it gave me this big issue.
I already have APFSDriverLoader installed in the drivers folder in clover

I tried to update Mojave to Big Sur using the iOS update but during the installation when computer rebooted Mojave and Update option to Big Sur disappeared, I only see Windows 10 there now.

I had perfectly good installed system before this...
I just checked it again and they are all disabled. I also disabled USB3 in bios. Did you check the config file in the EFI folder? Following kexts are in the L/E folder.

Ok I hooked up Asus Nvidia 210 graphics card and it loaded without any changes in clover but not with graphics accelerator. It takes long time to load I will be removing it.
