I don't have UD5H, I have a UD4H but anyway I think you don't need to return the i7 4790K. Maybe you need to update your BIOS for a more recent one. I think all Z87X works with 4790K.
Take a look at this link and find you BIOS and install it...

it's been 2 days since I deactivated XMP and since then no random freezes. I don't think I really need the OC stuff, for now at least. Maybe there will be some updates to fix it, but I am happy with the stability I have now.
No, I didn't. I didn't even know I could disable dual-bios function. I just set up BIOS this way and boot using Unibeast and installing Mavericks with no problems.
I built the almost the same system. Try to follow my build and see if it works.
Remember to make sure Vt-d is disabled and also Turbo boost.
