Thanks for the info. I was pretty sure I'd need to spoof CPU, but wasn't aware about RX580 glitch. I don't use the HMDI/DP for audio as I have a separate speaker system plugged into the audio out jack. I don't really want to flash the GPU bios as I spend more than 50% of my time in Windows...

No mention of the ACPI files need to boot USB anywhere. I got stuck with opencore not booting using this guide because I read this first rather than the dortania guide (dortania are the makers of OpenCore)

Got it. I just disabled the XhciPortlimit in OpenCore and got my USB 2 ports back.
Kernel -> Quirks -> XhciPortLimit -> False
I'll setup the USBPorts kexts once Big Sur is installed and configure it all properly then.
I was having the same problem.
Using Opencore I set the Kernel -> Quirks -> XhciPortLimit -> False and put CtlnaAHCIPort.kext and USBInjectAll.kext in the kext folder. This pretty much gave me all the USB ports as USB2 which allowed my mouse and keyboard to work.
Eventually I ended up using USB...
