I have the same problem. I found that if I change the system definition from iMacPro 1,1 to iMac19,1 system update works. I do have SecureBootModel set to disabled.

I did this and hot plugging now works, thanks, but after making these changes the eject key on my keyboard doesn't eject. It works as a shortcut as for putting monitor to sleep but not to activate the tray. Any ideas? Thanks.
Mount the EFI partition using Clover Configurator ore somesuch. On original drive, mount EFI partition. Mount EFI partition on new drive, copy EFI folder from original drive to EFI partiton on new drive. That's pretty much all I got.
you have to copy the EFI folder/partition. CCC doesn't do it. When you have both drives in the computer its reading the EFI folder from your old drive which is why it works.
