From my experience (HD5770 & HD6870), if you managed to find a compatible AMD/ATi Radeon graphics card, it tends to work without a hitch.

It is worth investigating into multiple display support with some of the nVidia cards, it looks like the some there are other hack1nt0sh users are having problems connecting additional displays or getting them to work according to their desired specs.

depends on usage, there probably won't be any noticeable difference when used as boot drive
Just a tip off, the Fusion Drive will stutter if you are streaming media off it. For example, your recording footage will stutter you decide to copy & paste to another drive (another access)
