I use 2 memory sticks and a 970 EVO SSD (which is super fast), the system is stable, no crash / Kernel Panic for the moment.
I should upload the 2 config.plist files, you are right, this part can be tricky during installation.

But I can't access the recovery partition to erase macOS from my SSD.

I finale managed to install macOS on my NUC8I5BEK, 16GB Crucial RAM and 500GB 970 NVMe + DELL with HDMI (Full HD).
Everything's looks to be working (Clover on boot, sound via HDMI, USB3 ports), thanks to @RehabMan.
I ran Handbrake to test the CPU, works great!
