The Dortania Guide is excellent, from the 6.3 even more understandable than before - and with the necessary tools linked.
I just updated to 11.1 without problems.
It takes about half an hour after a 3.6GB download.
I would recommend to follow the Dortania USB guide. Its very comprehensive.
I tried and failed to do the mapping twice - but as this guide got updated, I finally succeeded.
Its roughly these steps:
1. use USBInjectAll to get all the USB ports.
2. route the ports EHC1 to EH01 and EHC2 to EH02...

New to OC, used pre-compiled Haswell AMLs. Sleep does not work.
Just mapped USB ports and made a custom USBmapping.kext - that now works well.
Its an old build ... but with 32GB RAM and NVME patch for the BIOS - It works quite nice.
The 960 EVO shows as internal on my Mojave setup, and I don't remember addressing this issue in my Clover setup.
The Catalina-Data partition shows under "Locations" in Mojave finder sidebar,
and I can't remove it from there.
Mojave works very well with Clover.
I also installed Catalina on second boot drive - it works, but I rather wait till next . update so that the iCloud and Mail issues are resolved. Catalina looks quite a nice update.
I don't perceive any significant differences in boot speed between Mojave and Catalina.
Not sure what you mean by stops in between.
When installing:
Run Catalina install in a Mojave boot - install into a fresh new APFS drive - Reboot.
Select OSX install in Clover - reboot.
Select Catalina...
Updated to Catalina.
Updated Clover and all kext beforehand.
The install only worked from Mohave onto a new drive WITHOUT any other (HFS) partitions.
My EFI Clover setup failed to load Catalina Install from a USB drive.
Updated to 10.14.6. No issues.
Does anyone plan to update to Catalina?
Would someone team up to figure out the settings for this system for the new Open Core Bootloader?
Updated to 10.14.3 with temporarily copying "the usual" kexts from S/E to the /Other folder.
Update without problems.
Everything works as before (apart from sleep).

I tried to simply replace it with mine, as the config.plist was a bit too complex for me to understand and to apply it to my setup. I went back to FakeSMC.kext... but the system did not boot up at all.

I am trying to do some tweaks to it under Mojave, but the excellent thread from Wildwillow does not see much attention anymore. So I am wondering if I might get lucky here...
With latest Clover from main branch and kexts to go in Library/Extensions.
Please be sure to remove all other kexts, expecially since VirtualSMC.kext is used.

DataHubDxe-64.efi (not sure about function, system works without)
