Another thing I would be wary of is my MacBook Pro 2013 I7 is still going strong after 7 years (well apart from Big Sur (prise) breaking it) I suspect a Mac with an M1 apple chip will be unsupported within 4 years as they will have reached the M4 chip and not be interested in supporting earlier...
I honestly think this is a mistake, I have 3 hacks but they all are dual boot because some things are better with windows (e.g. games). if you alienate your ecosystem from 95% of the worlds software market you end up with a glorified iPad that looks lovely but is totally useless for anything...
probably but Catalina will automatically convert it if I remember correctly. Trying to avoid APFS just adds more pain, I have 2 hacks both running APFS and its fine.

So just to let you know I used your configuration to get my Gigabyte Z390 Gaming X with i9-9900K working on Catalina. Many thanks as after initial hardware upgrade I couldnt boot at all so copied your files over and all good again.

Nvidia GTX 1080
Had to add a USB Wifi since Killer WiFi module is not supported, no panel brightness controls yet and no working computer sleep but everything...
Running reasonably well on my Alienware 17R5 Core I9 laptop, only things I can't get working properly is brightness control and sleep mode. Even installed Mojave which worked too apart from the lack of Nvidia Web drivers.
