My fenvi t919 in the Sage has always been plugged into slot 1. I have it because in my hacks i've always liked using the magic keyboard and magic mouse. It works well but honestly i've never tried to connect other bluetooth devices: because i don't have any.

I have no direct experience with the video card in slot 3 but i have a friend with the sage 10G who has been using the radeon VII in slot 3 for over a year and has never experienced any problems. I believe the 6900 XT is also fine connected to slot 3.
Yes, on Sage 10G i have the video card in slot 5 because otherwise it covers the slot 2 that i use for thunderbolt.

Asus recommends plugging the video card into slot 1, like you did. Have you tried plugging the video card into slot 5 and see if you still have freezes?

Here no problem between the 6900 XT Reference and Gigabyte Titan Ridge with modified firmware. Big sur 11.4 with SMBIOS IMAC Pro 1.1 (i prefer this based on my hardware), Weg and Adgpmod = Pikera in the boot arg.

It was the bios version 3405 that caused the KP. Loaded version 3302 and finally installation without problems of 11.4 beta 1.
Mac pro 7.1, no WEG, no string agdpmod = in boot args. Some first tests:
The bios is configured correctly. I tried clean install from usb again but it always occurs KP arrived at the install screen. I don't think it's a problem with the 6900 XT but maybe some changes made by apple in beta 11.4 which maybe needs some new patch for the 299 platform.
Tried your EFI - with or without USB kext - I don't get to the installation screen: it stops immediately at the apple logo without the loading bar appearing below. Bios is the last version and works with Big Sur 11.2.3
