As far as I know, the Sidecar problem is not the result of the BCM94360NG module, but of the SMBIOS module that is chosen in your configuration. In my case, I have set the "MacPro7,1" profile because it is the most coherent with my uses, but Sidecar gets disabled because it relies on the iGPU...
Indeed, one of the reasons for which I chose the 12600 instead of the 12600k is not to be worried by problems with different core types. I hope his tips will help you!
As a quick follow-up, I can report that this build still holds on pretty well with the recently released Sonoma 14.2, still with OpenCore 0.9.3.

The first question that comes to my mind is: which version of Monterey are you trying to boot? The Radeon 6600 is supported only in Monterey 12.1, so if you happen to have used a 12.0 installer, then it may be the reason.

I have tried running Sonoma in public beta about 2 months ago: everything was working fine, except for the WiFi module. Unfortunately, Apple removed its drivers in Sonoma.
Curiously, Bluetooth was working, though... But the lack of WiFi is enough to make you lose the specific Apple...
Around 20 minutes to update from 13.4.1 through the Mac App Store (I block all Apple updates on my network with Pi-Hole to avoid unwanted updates), everything went smoothly !

Nope, I only removed the SMBIOS info items.
I mostly used pre-generated files available from Dortania's guide, and maybe a few from @CaseySJ. I do not precisely remember this part, but I did not generate any of them by myself.
I sincerely doubt your GPU is making problems if it runs well...
