I finally found a solution for this. It seems that the Mojave installer I had was for 10.14.1. I upgraded it to 10.14.6, reinstalled everything and now I can reach the desktop with full graphics acceleration.

I tried to follow your guide but I can't reach the macOS installer. It takes forever for the loading bar to fill and then nothing happens. If I start with verbose on, I can see a lot a ACPI related errors. Here is a screenshot of these errors. Anything I can try to at least reach the installer?
