Is it worth to use an older version (Sierra or High Sierra) only because of NVIDIA drivers? I don't use Apple Music, I don't use XCODE, don't care about dark mode or arcade... so is there any others downsides?

You're using MacBookPro13,3 model in SMBIOS, try changing to 13,1 and see if it changes anything. Anything close to your current configuration and setting should be ok to try.

I'm using an SSD and the same happened when I tried to install the update. I tried every option in clover boot but nothing seems to actually install the update and I always come back to App Store saying it is available.
