Also, I'm starting to wonder if the issue I'm having is actually just in Chrome. Maybe my hackintosh is outputting full range to my monitor. But for some reason Chrome displays YouTube videos incorrectly.

It doesn't appear to be defaulting to full range over DisplayPort. I also have no way of knowing whether my GPU is outputting 8-bit or 10-bit signals to my monitor. In Windows, there is the NVIDIA Control Panel, and I get these options:

Turns out my GTX 1080 isn't outputting ‘Full Range RGB 0-255’ color but is instead outputting ‘Limited Range RGB 16-235’ color. Anyone have any idea for how to fix this in macOS?? There's a workaround for Windows, but I can't find anything for macOS...
I'm having this problem right now with DisplayPort. I'm getting limited range color in macOS. I had the same issue in Windows, but in Windows you can just toggle the setting to full.
