One more question : do I need a wàtercooling kit if I don't want to overclock ? Is it going to make a big difference ? It is not a question of money, but if I could gain room, I'd be happy ;)

You would not need a water cooling kit even if you were going to OC. It is peerfectly acceptable and possible to OC on air coolers.
 
So, what would you suggest please ? What kind of air cooling should I take instead please ? I'd like something which doesn't make noise, but if it makes some but let me gain room, it's better

I'll have an i7-3770K, and won't overclock it at first, but might do it later.
I don't think I'll cool my GPU, which will be a GTX 670 OC by msi

I would always use low profile ram with a non stock air cooler.

Whether it will all fit in a G5 case is a different matter. Not having one, I couldn't say yea or nay for parts fitting. As I understand from reading in the workshop forum, it is a matter of measure, try it, measure again if it doesn't fit and try something else.

I will say you have a better chance of a low profile horizontal cooler ftting than a tall tower style cooler like the Noctua NH-D14 or the MegaHalems coolers.
 
Ok, so I think I'm gonna order everything except for the cooling, and mount it, then I will take measures to see how much room I have :)

That would seem to be best. I remember years ago, my second or third build, I depended on the specs instead of real world measuring for a build and everything was going to fit with 2mm to spare. WRONG - forgot to take into considerarion the standoffs for the mainboard, which meant the cooler was 4mm too tall for the case cover to fit on. :banghead: Haven't made that mistake again!
