My X99 Setup Won't Post and I'm About to Lose My Mind (Please Help Me)

Hello there!

I am seeking guidance on helping to get my X99 setup stable and booting. I've tried posting on other forums; either no one knows how to fix it or they don't want to reply. Is what it is, no grudges here.
I'm hoping that some of you may have a bit more of an idea as to why my system may not be posting properly. For reference, my system setup is as folllows:
CPU - Intel Xeon E5-2695 V4 18 core 36 thread LGA2011-3.
Motherboard - MSI X99A SLI Plus.
RAM - 32GB DDR4 C15 2400MHz
Install Disk - Catalina on a WD SN550 NVMe SSD, aiming to install Monterey on a Samsung 970 EVO PLUS (updated firmware).
GPU - RX580 (for maximum compatibility, aiming to upgrade to RX6800 in future).
PSU - Corsair AX1200
Bios settings (as of now): CFG lock disabled, Above4GDecoding enabled, VT-D disabled, SecureBoot disabled, Fast Boot disabled, Windows 8/8.1 UEFI mode enabled.

Here's the story:

Part 1: Catalina and USB Mapping.
I decided first to install Catalina so that I could map all my USB ports. I am aware you can do this in Windows, however I wanted to do it in macOS as I thought it might give me better support when I went up to Monterey. I had to change around a few things to get the Catalina installer to boot but nothing too serious; it was up and running within a few hours and was really well optimized. I mapped my USB ports, installed the kext and disabled the XHCI port limit; everything was working great. I downloaded Monterey, installed it to a USB and then copied my EFI that I used to boot Catalina onto the drive.

Part 2: HumerousGorgon vs OCB: StartImage Failed - Aborted
This was a short lived victory on my part, managed to get past this error by making some tweaks to my EFI. I had won this round...

Part 3: HumerousGorgon vs Monterey boot.
I kept getting errors at ever step of the way, constantly having to make changes to the EFI and reading forum post after forum post about different things and configurations. I've attached the EFI at it's current state, I'm hoping that someone might have some insight or things to try. I'm getting stuck at a kernel panic at IOPCIFamily, which is documented on the OpenCore Guide, however I have already enabled the respective quirks/disabled CFG lock/enabled CFG lock to try, no combination works. The only other reality is that it's my SSDT-UNC, which is already included. Attached to this post is my EFI and my DSDT.

Part 4: Despair
I'm not exactly sure where to turn now, so I'm hoping that someone here can give me a hand. I've had amazing hackintoshes before that worked great, but I do really need this one to work. I'm willing to try anything or supply anything anyone needs, along with trying any suggestions in regards to bios changes/efi changes.

No help here.

However, if you plan to install Monterey on a Samsung 970 EVO Plus, I would strongly advise against it as it might cause serious problems :

Perhaps you might consider to clone Catalina from the WD SN550 to the Samsung drive and instead use the WD drive to install Monterey?
