Opencore Big Sur installation - Stuck at Apple logo

MOBO: Gigabyte H370M DS3H with Intel Core i5-8400 Box

Trying to install Big Sur but although the installer USB is visible on the picker, when I select it it gets stuck on the Apple logo with no progress bar at all. Also, I don't see the internal volume on the picker.

I am attaching the EFI folder as well as my BIOS USB configuration settings

Boot in verbose mode for a clue why.

All of your OpenCore files must be from the same release version.

My profile mentions my hackintosh which is fine, thank god... the hackintosh mentioned on the original post is my wife's. So I am in a world of pain if I don't fix it soon. :p

I have enabled verbose mode on OpenCore. Something flashes instantly before I get to the boot picker but there is no way to tell what it is, it's only for a fraction of a second. Once I select the mac os installer volume, nothing else shows except the apple logo with no progress bar.
 
My profile mentions my hackintosh which is fine, thank god... the hackintosh mentioned on the original post is my wife's.

Perhaps I don't understand the problem exactly. My profile mentions the hardware (motherboard, CPU and Graphics). Is there something else I need to add? Sorry but english is not my native language, perhaps I am missing something.

Since the build mentioned in my profile is my working machine and I don't want to change it, I added a new build on my signature. Please, check. Should I remove it when done? It's not mine, really.
