I don't know of a guide on how to update Clover.

But for your kexts...
NoVPAjpeg just disables hardware acceleration.
HDMIaudio should no longer be needed with never versions of AppleALC.

I got Clover V 5.18.3.0 it s fine right ? I checked updates and seems I m up to date. I thought EFI update was a different thing from Clover update ^^

Deleted HDMIaudio and NoVPAjpeg.
NoVPAjpeg was used to fix jpg but I did fix it differently before by just changing mac definition so I do not need it. Specially if it disable gpu acceleration..

You do not need FakePCIID_XHCIMux.kext on a Z390 motherboard.

For any kexts in Library/Extensions that you delete, remember to rebuild your kext-caches.
