I had RAM stability issues with some of the older versions of BIOS. Even standard XMP was unstable. F9l has been solid.
I've done handbrake conversions overnight with my overclock on F9l where I queued up 4-5 videos to be converted and no problems.
Yeah, I had problems with my BIOS updates and my mobo -- GB Z390 Gaming X. I'm still stuck on F10g beta because when I went to F10h, the system wouldn't boot if XMP was engaged. IIRC, my XMP is at 3600. I found that if I used the XMP timings but manually ratcheted the speed down to 3400, it would work.
The handbrake would "choke" only on certain files. If I adjusted the codec to primarily use my dGPU, it would usually get through the file, but then there were files that wouldn't convert with either the overclocked iGPU or dGPU. In the end, I just put it back to stock. I might try playing around with it again.
I'm actually wrestling with a 6900XT. It's one of the newer XTXH cards that I have to spoof with the old device-id. The latest OpenCore with WEG is supposed to allow this to be done easily but I can't get it work for some reason.
