Gigabyte Z390 M Gaming build with working NVRAM

Can anyone tell me what the impact is if I leave Intel Platform Trust Technology active on BIOS for macOS?
Because if you leave Windows 11 active, it recognizes that it has TPM 2.0 active.

I turned on TPM 2.0 in BIOS after the announcement of Windows 11 and it hasn't affected macOS at all.

This problem started to happen maybe 4-6 months after I did my build, and it has been going on for about 6 months since then. My system randomly freezes. When the system was installed on NVMe, the kernel panics were talking about the NVMe disk (see my previous posts on this thread). Now I decided to install my system on a regular SSD, and I am still getting freezes. When my system is freshly installed, I have no problem for some time. Then it happens again, more and more frequently. The first crashes often happens when Final Cut Pro is doing some background rendering, but then it starts to happen randomly. It looks to me that the data on the drives are getting corrupted, because Time Machine is struggling to back-up my drives (I had to remove my FCPX library from the backups otherwise it refused to backup at all). My library isn't even on my main drive. For the time begin I am writing from an emergency user account I created for safety, because my system will crash if I log into any other account. I will probably have to reinstall Catalina, and I know it will happen again in a few weeks…

Are you overclocked?
How are your CPU and GPU temps?
Have you tried with XMP disabled?
Can you try running Windows and/or Linux for a few days to see if you get freezes?

No overclock,
CPU temp is fine, it can handle long HandBrake encodes for a long time at a higher average temperature without crashing.
GPU temp seems fine but I will monitor that more closely. I remember running graphics benchmarks for a long time without problems.
XMP seemed to be already disabled from what I just saw in the bios.
I ran Windows on a NVMe drive that I removed from the PC (thinking it was the cause of the crashes). I did a bit of gaming and it ran fine. It is hard for me to try it for a long time since my workflow is based around Final Cut, Logic and Pixelmator.

I couldn't get much from your crash report other than "it crashed"... That's why I thought it may have been hardware related, but it sounds like the hardware is fine.

You seem to have some older versions of kexts. Maybe try updating to the latest versions.
 
I don't know if anyone here goes through this, but how long does it take to boot into the system?
Here it's taking more than 25 seconds.
Remembering that I use SSD NVMe but I have 4 HDD of 4TB.

Keep in mind that having lots of "Login Items" and enabling "Reopen windows when logging back in" will lengthen how long it takes for you to get to the Finder desktop.

About "Login Items", I only have 3, but the question of enabling "Reopen windows when logging in again" I'm leaving active, which in this case opens Whatsapp Desktop, Chrome with 22 open tabs, iStatistica Pro open and Parallels with Windows 10 Pro VM at rest.
So in this case it has nothing to do with having the HDDs connected, as a colleague of mine said that when he disconnected his HDDs the NVMe boot was much faster.

I am currently reinstalling with my outdated but working EFI.

I cannot boot into the installation drive with the latest EFI. I tried Clover and Opencore. Here is the screen I get with Open Core :
