Just out of curiosity: I suppose APFS MinDate and MinVersion are for providing a better APFS support, depending on the OS — meaning that APFS version in Mojave is not exactly the same as in Big Sur?
As I understand it, there's forward compatibility, Mojave MinDate and MinVersion will allow Big Sur but not the contrary? Am I right?

Each macOS version has its own version of the APFS driver, you can see it in System Profiler >> Extensions >> apfs.
And yes, there is forward compatibility but not backward.

I meant the APFS format itself: will an APFS drive formatted under Mojave be any different than the same one formatted under Big Sur, for example? (like for HDMI 1.0, 1.1, etc.)
I guess your answer means no.

Yes, you can boot Big Sur writing the values for Catalina, Big Sur loads its own version of the driver.

Yes, thanks... I used mini date and mini version values for Catalina and SecureBootModel string for iMac 20,1 and everything works fine. Both Catalina and Big Sur are booting without problems.

I think APFS format is the same but Apple has made some changes over partitioning scheme so Mojave and Catalina don't see well Big Sur or Monterey disks (there are some problems mounting Preboot instead of Data) but Big Sur and Monterey do well with Mojave or Catalina volumes.

What changes between versions is the driver that allows working with APFS, each new version has improvements in performance but above all in security.

Since Big Sur and Monterey have higher security standards than Catalina or Mojave, OpenCore has decided that the 2 most modern versions of macOS can only boot with at least Big Sur's APFS driver, not the previous ones, to ensure those safety standards.
This is the reason why MinDate and MinVersion -1 are not recommended, because driver version is not checked and any available version is accepted.

Have you done ResetNVRAM al least once?
Do you have last version of kexts?
