I tested with macOS Big Sur v11.0.1, nothing serious is changed so will also work for v11.5.2
I personally have OpenCore v0.7.2 with all the kexts and patches updated as well, also updated to v11.5.2 last night, I don't plan to update the EFI unless the *Bug that causes black-screen at Boot Picker is fixed.
Update kernel extensions (kexts), also update config.plist (use ocvalidate to check config for errors) read OpenCore documentation and changelog before modifying anything, if done everything right you will also get black-screen at OpenCore boot picker. Enabling CSM Support in BIOS helps with black-screen but setting only visible if you have unlocked BIOS.
TL;DR: do not update OpenCore, but can update kernel extensions. only reasonable change will be AirportItlwm (user stable v2.0.0) for Intel Wi-Fi that will improve Wi-Fi performance (a lot), none of the other changes/updates matter much and you can use all the files as is for the installation
