Kernal panic x99 build

trying to install high Sierra, it crashes instantly with a kernel panic. any suggestions?

OK. Have you made sure that your BIOS settings have been set exactly as mentioned in the guide?
Have you also enabled Above 4G Decoding in the BIOS, disabled Serial Port and VT-d? These are crucial settings for Coffee Lake based motherboards. Also as a suggestion, for the installation process I would recommend that you remove the Nvidia card completely from the case first and run only with the Intel iGPU first (my guide shows how to enable the Nvidia card afterwards). Try that with a SMBIOS setting of MacPro6,1 and FakeCPUID of 0306A0.

I have done all of this, it boots fine in the installation phase it's just the final reboot thay it crash after I install multibeast so I assume it's something to do with that.. any suggestions?

Yes. Try taking out the Nvidia card and just try booting it up without it (to test if the install works at all). If you do manage to get into macOS afterwards, install the CUDA drivers and Nvidia web drivers and then re-install the card.

The OP is using a X99 motherboard and the CPUs have no integrated graphics (definitely NOT Coffee Lake). So his/her system cannot work without a graphics card.

I've got the correct drivers installed for my build but it just won't do anything. I'm 99% sure its something to do with the cpu but im just slumped with how to fix it. I've managed to get Sierra 100% running before but I thought id give high Sierra a go this time. Maybe I should just revert

If the correct drivers were installed it would boot. However it is not. Which means you have an issue somewhere.
That issue could be either incorrect kext or perhaps a problematic version of Clover. Unfortunately sometimes you have to backtrack and double-check and recheck if necessary.

As I suggested earlier, the best way in now would be to boot from the Install High Sierra USB's EFI by pressing F12 boot selection key and selecting that to boot, and when it reaches Clover instead try to select the installed macOS SSD at the selection screen. That will/should bypass your current Multibeast EFI installation on the main drive and allow you back into macOS.

I'm also looking at the guide you followed and reckon it could be missing an ig-platform-id.
Try adding 04001204 into the ig-platform-id field under the Graphics section, check the Inject Intel icon as these are for Haswell-based CPUs without an iGPU. Also add in the 0x0s under the FakeID section (like the example shown below):
