I've received an old pc with I7-6700, Mainboard Gigabyte ga-B150m-ds3h and Asus Gt730.

Which version of MacOs can I install on it?

Mojave, Catalina, Big Sur all would work with what you have. You could check whether your GT 730 is Kepler based or not. Some of them aren't. Find out at www.GPUZoo.com

GT730? That depends on whether the card is based on a Kepler graphics chip. If so MacOS should be compatible, and if not (Fermi) the card is not supported (lack of Metal support) and you will have problems.

You can also consider removing your graphics card and just use CPU integrated graphics if the graphics card is not supported. You can run MacOS Sierra 10.12.6 up to MacOS Big Sur (latest) in such a case.
