Considering that you must follow the official documentation, here is my guide to migrate to OpenCore 0.6.2 (Update to 0.6.3 at the end) starting with a working setup.

Great guide. Used it, and now booting using OpenCore on my golden oldie. I now have it and my i9 both booting from OpenCore. The only thing left for this one is the USB mapping. I dont use this machine very much with anything USB so I might forgo that.

I am able to make those overclock changes, but when it reboots I only see 4GHz in the boot screen and the About This Mac. Does the over clock reflect those for you? Is there anything outside of that tutorial that needs to be changed?

Download the intel gadget and see what your peak cpu usage is.

As @boogieman77 said you need Intel Power Gadget or other software to see it :

I can see it. I get about 3k more points in Geekbench 4. Thanks.
Good deal. Show its showing your overclock speed now correct?

Never mind see it in your pic you posted.. what voltage did you get away with using?
 
Has anyone tried to convert a Clover boot to an Opencore boot using the guide?

It seems to state that I need to remove all my hack related kexts:

When I run the:
sudo kextcache -i /

Am I supposed to DELETE those or move them to the OC EFI Kexts folder? Some of those are already in there as required by the Dortania guide. Lilu, WhateverGreen, AppleALC and IntelMausiEthernet are already on my USB OpenCore boot disk's EFI folder.
 
My experience with the dortania guide is that my USB disk will boot and I reach the MacOS Installer but if I try to use the USB disk to boot my existing (Clover) SSD that everything dies quickly with a kernel panic.
 
All the kexts related things are so different that you better do a fresh install and import your data and applications without your settings.

All of the hackintosh kexts in /Library/Extensions/ have to be moved (copy then delete) to the /EFI/OC/kexts/ folder. So, if I read the conversion from Clover to OC, just the /L/E/ folder kexts as you shouldn't have any hackintosh kexts in /S/L/E/ folder.
