[SUCCESS] Gigabyte Designare Z390 (Thunderbolt 3) + i7-9700K + AMD RX 580

But now Mac won’t boot anymore. It shows up Apple logo with one one bar. The other boots were all restarts so I guess I didn’t fully test it out.

Thanks for pointing this out. I will redact the procedure to mount the root file system with read/write permissions in Big Sur. At this time we must not tamper with Big Sur’s security apparatus.

So I got past the installer load screen and it went through the entire install. Afterward the system did boot, although the boot time is extremely slow but once it loaded it only shows 1 monitor and the screen is blown out so I can't see any prompts if there even is one. For what it's worth it showed both monitors during the install.

Any thoughts?

Darwin is the base of all macOS, so yes but before doing any changes have you tried Casey's OC 0.6.3 EFI folder?
Even though not all aml files include this condition it is working with OC 0.6.3 in my case without a problem. My question was more about consistency within the aml files.

i made and activated three entries via the opencore configurator under misc -> entries.
Unfortunately, when the boot menu starts, the three "old" entries are still displayed. Is there a possibility to hide the boot entries created by default?
For a better understanding I have added screenshots.

Some of these GPU/Monitor issues can be very tricky. Let's do this:
  • Connect only 1 monitor. What is the make/model of the monitor? Photo says "Acer", but not the model number.
  • Try different ports and connectors. Try both HDMI and DisplayPort.
  • Perform a factory reset on the monitor via its on-board menu.
  • Try a different GPU. If you have an RX 580, try that first (you may keep "agdpmod=pikera" even with RX 580).
  • Try enabling CSM Support in BIOS Setup.

Good question. It would be best to post this in the relevant thread on Insanely Mac where the OpenCore developers (vit9696 in particular) maintain a presence. But search Insanely Mac first, in case an answer has already been posted.
 
Geekbench 5 scores, Catalina vs Big Sur 11.1, no booster used
Metal has 2 time better score on Big Sur than on Catalina
OpenCL's score on Big Sur is 3 time better than with Catalina
No real difference for the CPU

MaxTech, 9to5Mac, and others on YouTube have compared 4K and 8K Final Cut Pro timeline scrubbing and exporting on M1 Mac mini versus (a) 16 Inch MacBook Pro and (b) 28-Core 2019 Mac Pro and found the $700 Mac mini to outclass them both.

Having watched a fair number of M1 reviews on YouTube, I am quickly coming to the conclusion that within 12 to 18 months there will be no further reason to run an Intel-based Mac.

Incidentally, not for a single moment did I think that the 2019 Mac Pro (starting price $6000) made any sense. Some YouTubers purchased $30,000 Mac Pro configurations that are being outclassed by the $700 Mac mini. When higher end Apple Silicon Macs arrive next year, I can only imagine how far ahead they will be.
