@Stork OC might be in beta, but my experience is OC is way more stable (and better documented) than Clover.

This is true. It goes so far as to make my 2009 and 2010 Mac Pros work FANTASTICALLY with Catalina and so much better than the other options. My experience so far with OpenCore config is that it's much more robust and the process feels more stable than Clover.
 
@jonz did you have to do alteration from default values for this mother board? Do you mind posting your config.plist and screenshot of ACPI and Kext folders?

Only thing I needed was to remove my Wifi card (TL-WDN4800 N900) as it is not nativelly supported. I have put it back after 1st boot and enabled it with IO80211Family.kext. A Catalina compatible card is on the way.

Here are the screenshot & config.plist
- OC is configurated to use OpenCanopy picker
- Kext > Brcm* are for my BlueTooth dongle
- ACPI > SSDT-GPU-DISABLE.aml is to disable my 1080Ti on 1st PCI slot

Hackintool is a good tool for USB port mapping. Surprisingly easy if you have a drawing of your physical ports.
 
You can do Intel ports (HXCI) with a tool but if you want to map others controllers like ASMedia (PXSX) you need to do it manually as I understood.

You can map it in your kext. I join my .plist and .kext
