Fresh Catalina install rebooting before completed

I've been checking the forum, and can't really find an answer. I've followed the installation guide on doing a fresh Catalina Install. I got through wiping the drive, and starting the install process. It finishes the first portion of the install, reboots back into clover, I then click the physical drive that Catalina was installed to to start the second portion of the install. At this point it boots to the install screen and progress bar gets about 1/10th of the way across (12 minutes remaining) when suddenly the screen goes black and the Computer restarts me back to the clover splash page to choose what drive to boot.

I've been trying to use the verbose flag, but for some reason it is not giving me any output data. I just continue to get the Apple logo instead. I've also tried safe mode, but that doesn't seem to have any effect.

My Clover drive is pretty much base off the UniBeast installer, and then I added the USBinjectALL.kext and KHCI-unsupported.kext to the "other" folder.
 
That's normal.

It needs to reboot 2 or 3 times depending on the hardware. Just keep selecting the volume where Catalina is installing.

I believe I went through 3-4 reboots and just came back to the same place. I ended up going back to a Mojave install because I've got a big project I need to complete. I'll play with Catalina again in a few weeks.
