Clover incompatible version

That is because you have not configured your system correctly not because Clover is an incompatible version.
The configuration is the same as I had with Mojave, boot Secure = disable, legacy = enable ..

you should use Uefi boot without secure boot.
 
I did, use the new Clover App
I haven't found it yet.. :(
Just use "Clover.app", there is a reason explained by the developer:
Will the installer no longer be supported?
No. The package is still supported, also because Clover.app doesn't support old OSes like 10.10, 10.9 and older. However the pkg has reached some limits by installing on Catalina.

I have not been able to solve so far. Install in my SSD where I have Catalina and in my HDD my Windows. The two are separated and installed individually, before pressing F9 and selecting the SSD it already seemed like the clover menu, now I must enter the SSD, choose the EFI folder, BOOT ----> Boot.efi and there just appears the clover menu ..
 
Yes. Something deleted your Clover entry in BIOS. You have to re-add it. You could use hasleo easyUefi or everything you want, or you can find it every time you power on the pc.
Keep in mind that the file you're looking for is EFI/Clover/cloverx64.efi or something similar, not EFI/BOOT/boot.efi.

as I can add the Clover entry to the bios?, all entries are deleted.
