So I went to update to 10.14.5.

I updated clover to the latest build, and started the update from the app store, once the system rebooted clover no longer shows my drive anymore. I verified in the bios thats its still their and also tried the clover cli to see if the EFI partition for my drive was visible, which it is.

I have no idea what to do next, the drive is at the latest available firmware I know PRO drives had to update.

Any idea what I could try ?

After updating Clover EFI in your previous whatever macOS version you had (not mentioned in your post what was the prior macOS in your Samsung 970 EVO M2) , did you not check EFI>EFI>CLOVER FileTree specifically paying attention to drivers64UEFI, kexts/Other and config.plist to make sure it can boot the macOSMojave 10.14.5 update just like checking the BIOS options?
I suspect a problem with the contents of drivers64UEFI folder and a missing AptioFix essential for Memory Mapping.
