Parts List for Professional Music Production Rig

After a lot of browsing through threads here and on other sites, I've put together a parts list for the Hackintosh I'm considering building (first time). My priorities (besides the obvious - max power/speed!) are:
  • Value (don't want to spend money just for the sake of it)
  • Quietness (hoping to get as close to silent as possible)
  • Ease of installation (don't want parts that cause headaches to setup)
  • Reliability (it's my work machine so I can't have it acting up)
Hoping to get some feedback that might include:
  • Experience with same/similar combination of parts.
  • Suggestions on switching bolded parts for specific reasons.
  • Recommended PSU model and wattage for silence (is 750 enough? is 1000 unnecessary?).
  • Links to installation walkthroughs that would be helpful for this setup.
  • Anything else that might be useful!
CPU: Intel Core i9-9900k
CPU Cooler: Be Quiet! - Dark Rock 4 CPU Cooler (bought ✓)
Motherboard: Gigabyte - Z390 AORUS ELITE
GPU: Sapphire - Radeon RX 580 8 GB PULSE (bought ✓)
Memory: Crucial - Ballistix Sport LT 32 GB (2 x 16 GB) DDR4-2400 (bought ✓)
Storage: Samsung - 970 Evo 500 GB M.2-2280 SSD
Power Supply: Corsair - RMx (2018) 750-850 W or EVGA - SuperNOVA 750-850 W G2/G3
Case: Fractal Design - Define R5 (bought ✓)

fanless psu ( I dont think you will need so powerfull PSU 500 will be more then enough but double check me I am not an expert.

Yeah I've looked at this Seasonic fanless https://www.newegg.ca/Product/Product.aspx?Item=N82E16817151194, but it's really expensive for a PSU. I don't want such a big chunk of my build going to something that most people say you can get cheaper while maintaining top quality. I've done way too much reading on PSU comparisons and recommendations and there's not a true consensus. Basically some people say get good quality PSU like the Corsair RMx or EVGA G2/G3/P2 with a high enough wattage that the fan will literally never spin (because it doesn't kick in under a certain wattage use percentage), and others say just get a reasonable wattage with a high quality model and don't bother with spending more on wattage, or spend the extra money on fanless for full noise reduction.

Local used sales right now are giving me these options:

Corsair RM850x = $120 CAD
EVGA superNOVA G2 750W - $100 CAD
Seasonic SSR-600TL 600W (the one in the link) - $200 CAD

Would the power efficiency of the Seasonic make up for the initial cost in long term energy savings? Will the noise factor really be any different with either of these 3?

I would go for the Designare. There is a Golden Build available in this forum

The difference is pretty much Thunderbolt and WiFi, right? I don't run any Thunderbolt devices right now, so it's not a big concern for me. And I don't care about WiFi on a desktop. Not sure if the $140 difference is worth it unless there are some other things it brings to the table.
 
It might be a good investment if I was planning on hooking up some Thunderbolt stuff in the future. Just not sure that I'll need to!
