I'm unable to boot anymore with your version of EFI folder you sent me, I have to add the arg "npci=0X2000" to boot correctly.
I've reformat the macOS destination drive (through my macbook pro, not from the Disk Utility from the installer) and copy the EFI Folder from my USB stick to this disk, do you confirm EFI folders have to be identical both on USB stick and macOS destination drive ?

And I got kernel panic again :(

Yes.. same EFI-Folder for everything.
I don’t understand one thing. If you are able to boot your system with the EFI on the flash USB Flash drive installer durumg the first step of the macOS installation, why you are not able to boot your system with the same EFI on the same USB Flash drive installer also in the second step of the macOS installation?

Do you confirm this process :

1/ Boot from the USB Stick and select USB Stick in Clover
2/ Launch the installer
3/ Reboot
4/ Boot from the USB Stick and select the new macOS drive who appear in Clover
5/ cry...

13.) You are done.

I basically just rewrote a complete part of my guide..

After the step 6, Clover show me two entries : 1/ USB Stick and 2/ "Boot macOS Install from OSX", who OSX is the target drive I've formated before, so I have to select the second one ?

Neither do I and I also do not know how to help further. Are you also applying step 5? Please revise once more your ENTIRE BIOS settings and try to loose your remaining knot by yourself. I am sure with same patience and some trial error you will manage finally. Something seems still wrong in your system configuration at some place.

Good luck,

KGP

Ok, thanks for your help. I'll find a solution I hope :)
