Thank you again.

I think I'm all set now. I've attached my config.plist if you can confirm I've done everything correctly, please?

You put the ACPI renames in the wrong place. You currently have them here:

This is wrong. Remove them and put those renames to:

Thanks @pastrychef !!

In regards to the USB limit, can I not have all the USB ports working, or is it necessary to disable some of them a la your patch flag

macOS has a 15 port limit. You have to disable enough ports to bring your total number of active ports to 15 or less.

There are patches that remove the 15 port limit patch but they should not be considered permanent fixes.

This motherboard comes with software that will do the overclocking automatically.

The primary variables when overclocking are (1) temperatures and (2) voltage. If you are overheating, it's simple, improve cooling. There are lots of ways to do this including delidding, upgrading to better heatsink/fan, upgrading water cooler.

That being said, tt's out of the scope of discussion here. I recommend looking for help at overclock.net or anandtech.com.

I don't know why it would just stop working unless your serial, board serial, and/or UUID changed.

A very similar thing happened to one of my builds after a BIOS upgrade.
The original BIOS had native NVRAM support but the upgrade did not.
I fixed it by emulating NVRAM support with EmuVariableUefi-64 and RC scripts.
Full native NVRAM support was restored in a subsequent BIOS upgrade.
