Apart from the kernel panics (which are rather rare), I notice my system freezing when it is near idle and I am running a media file. I have to do a cold boot to get it to respond, and there is no kernel panic report notification when I boot back (so I assume those are not due to kernel panics?). Strangely enough, when I was stress testing my system to ensure it wasn't a CPU/memory/GPU issue, it turned out that when prime95 was running overnight, it did not freeze (and prime95 ran without errors). Similarly for memtest, when I run it via terminal from within High Sierra: system does not freeze and memtest runs successfully. I used cinebench to test my GPUs (1080 Ti/1050 Ti). So I am not sure why is this happening.

I have tried running Ubuntu on it, and that runs just fine too.

In your config.plist_ Boot Args, I noted you have [√]npci=0x2000 for your Nvidia GTX 1080Ti using NVidiaWeb drivers on an Intel 200 Series MoBo.
I have never seen this used for any systems beyond Intel 7 Series of boards.
If there was no boot error needing this flag, I would suggest removing that and see if your current graphics related KP goes away. I have not fully viewed your whole BIOS and CLOVER contents yet.
