For the USB you can try to use multibeast and increase max port limit (choose 200 series but search the forum for 300 series if something as changed). Best things is doing that but little tricky for beginners : https://www.tonymacx86.com/threads/guide-usb-power-property-injection-for-sierra-and-later.222266/

For power management : https://www.tonymacx86.com/threads/guide-generate-ssdt-for-coffee-lake-cpu.238311/
Or easier https://www.tonymacx86.com/attachments/plugin-png.303663/
Once done, check with intel gadget.

For overclock : I cannot help as Coffe Lake 3.7Ghz is more than enough on the mac side IMHO. If it is for the fun, check the Overclock section ;)

What difference should i see after changing the config.list on the mounted efi that i did on my hd ?

After fixing USB (u have to install a lot of patches as mentioned).

Use Intel Power Gadget to check turbo-boost and speedstep (the attached one is the way it looks normally for 8700K).

Test sleep/wake function (probably you have to test multiple "darkwake" setting in Clover to find a suitable option for you) and disable hybernation with "sudo pmset -a autopoweroff 0" and "sudo rm /var/vm/sleepimage" in terminal (it's currently not supported and automatically reboots the system if you leave it sleeping for 8 hours).

There are some aesthetics you can fix following this guide: http://www.idownloadblog.com/2017/01/13/how-to-modify-about-this-mac-hackintosh/

The turbo boost is working and sleep/awake as well only thing is the motherboard and all teh componets go to sleep but then after a few seconds it comes back up.

Having a nightmare to install windows now. i keep getting a message saying "windows could not boot the computer to the next phase..." i tried a lot of things but nothing work and havent find much help online

Try disabling wake on lan.
